Salted Fish XO Sauce is a local series of Er O Agricultural Cooperative. It is an exclusive recipe, using selected ingredients, adding Tai O salted fish, a sauce with local flavors of Hong Kong. Use it for Hong Kong-style rice rolls or carrot cake, etc. to add more flavor.

Brother Sheng, a western chef turned to farming. Brother Sheng was originally from Huaqiao, Cambodia, and settled in Hong Kong in the early 1970s. In the early days, he worked as a western cook, and in the 1990s, he switched to farming. They are the earliest organic farmers in Hong Kong, and are committed to promoting local organic ingredients. On his own farm, he never forgets his cooking skills while farming. He cooks meals with fresh ingredients. During his tenure in Er'ao, he was inspired by the flavor of Tai O Fish Village, and created the salted fish XO sauce with dried shrimp and salted fish as the main flavors.
